Adapted from a recipe by Jackie Lake out in Cushing, Oklahoma who got it from her Mom.

A nice chewy cookie.

MOLASSES COOKIES

 

INGREDIENTS

 

1 cup molasses

1 cup sugar

1 cup lard or shortening

1 cup water

1 tsp. ginger

1 tsp. baking soda

1 tsp. salt

About 6 cups AP flour

 

 

PROCEDURES:

 

Put first 4 ingredients in a saucepan, heat until shortening melts.

This can be done in the microwave if watched carefully.

 

Remove from heat and cool to lukewarm.

 

Add sifted dry ingredients, 2 cups at a time until a medium thick dough is formed. 

 

 Set aside to cool completely. 

 

When cooled, roll out and cut with serrated cookie cutter. (Jackie’s Mom said they didn't look right if you used a round cutter.)

 

Bake at 350 degrees for 12 to 15 min. 

 

"A Divinity Candy recipe is used for the icing.  The icing should not be as stiff as for candy, but should be spreadable.  Mom always made the icing yellow, pink and white. And immediately after frosting the cookie, dip it in coconut.  If the icing starts to set up, meaning gets to thick to spread, just add a drop or two of water. - Jackie"

 

Keep very well in a gallon jar.
