EASY DINNER ROLLS

INGREDIENTS:

1 cup warm water

2 packages active dry yeast

1/2 cup (1 stick) butter, melted

1/2 cup sugar

3 eggs

1 teaspoon salt

4 - 4.5 cups all-purpose flour

Additional melted butter (optional for brushing rolls)


PROCEDURES:

In a large bowl, combine the warm water and yeast.  Let the mixture stand until foamy, about 5 minutes.

Stir in the butter, sugar, eggs and salt. 

Beat in flour, one cup at a time until the dough is too stiff to mix. (all of the flour may not be needed)

Cover and refrigerate at least two hours.  Dough may be refrigerated up to four days.

Grease a 13X9 inch baking pan.

Turn the chilled dough out onto a lightly floured surface.

Divide dough into 24 equal pieces.

Roll each piece into a smooth round ball.  Place the balls in even rows in the baking pan.

Cover and let rise until doubled in volume, about one hour.

Preheat the oven to 375F (19C/Gas Mark 5).

Bake on top middle rack until the rolls are golden brown, approximately 15-20 minutes.

Brush the warm rolls with melted butter to provide a soft crust.

Break rolls apart to serve.
